Colombo is the commercial capital and largest city of the island of Sri Lanka.
Due to its large natural harbour and its strategic position along the East-West sea trade routes, Colombo was known to ancient traders 2,000 years ago.
In 1638 the Dutch VOC signed a treaty with King Rajasinha II of Kandy which assured the king assistance in his war against the Portuguese in exchange for a monopoly of the island's major trade goods.

Cinnamon
Cinnamon bark has a characteristic woody, musty, and earthy flavor and aroma, and can often include some underlying notes of sweet maple and complementary wood notes.
The spice is obtained from the inner bark of several tree species from the genus Cinnamomum. The aroma and flavour of cinnamon derive from its essential oil and principal component, cinnamaldehyde, as well as numerous other constituents including eugenol.

In Ancient Egypt, cinnamon was used to embalm mummies. From the Ptolemaic Kingdom onward, Ancient Egyptian recipes for kyphi, an aromatic used for burning, included cinnamon and cassia. The gifts of Hellenistic rulers to temples sometimes included cassia and cinnamon.
Cardamom
Cardamom has a complex aroma; strong, sweet and pungent with hints of lemon and mint. The flavour is piney, fruity and almost menthol.
It is is a spice made from the seeds of several plants in the genera Elettaria and Amomum in the family Zingiberaceae, both native to the Indian subcontinent.
They are recognized by their small seed pods: triangular in cross-section and spindle-shaped, with a thin, papery outer shell and small, black seeds; Elettaria pods are light green and smaller, while Amomum pods are larger and dark brown.
Cardamom has a strong, unique taste and is a common ingredient in Indian cooking. It is also used in baking in the Nordic countries, in particular in Sweden, Norway, and Finland. In the Middle East, green cardamom powder is used as a spice for sweet dishes, as well as a traditional flavouring in coffee and tea. Cardamom is also used to a wide extent in savoury dishes in several Middle Eastern countries.
Ginger
The flavour profile of fresh ginger is peppery, lemony, woody, earthy and warm.

Lemon
The flavour of lemon can be described as being aromatic of rose, lavender and pine with a slight note of herbaceous.
